Ostrich & beef bolognaise sauce
INGREDIENTS
- 30ml olive oil
- 1 onion, finely chopped
- 2 large garlic cloves, crushed
- 200g celery, finely chopped
- 200g carrot, finely chopped
- 400g ostrich mince
- 400g lean beef mince
- 10 sprigs thyme
- 800g tinned tomatoes, chopped
- 200ml homemade beef stock or free range chicken stock
- Black pepper to taste
- Large pinch salt
- 6 sprigs basil
- 10ml tomato paste
METHOD
Place a pot on the stove on a medium heat. Add oil and allow to heat then add the onions, carrots, celery and garlic.
Cook the vegetables for 5 to 8 minutes until soft, then add the beef and ostrich mince, stirring to break down any lumps.
Brown the mince for at least 10 minutes.
Add tomato paste and thyme and cook for 3 minutes. Then add the tomatoes and stock.
Simmer the sauce until it thickens, then add the basil and check the seasoning.
Serve immediately or cool down and freeze for later use.
Use the sauce for pasta, to stuff vegetables, to make quick cottage pie etc.
Chopped mushrooms can also be added for variation.
