Trail mix

INGREDIENTS
  • 80ml pumpkin seeds
  • 80ml whole almonds, raw and unsalted
  • 80ml cashew nuts, raw and unsalted
  • 80ml dried apples
  • 80ml dried apricots
  • 80ml dried figs, chopped
  • 80ml coconut flakes

METHOD

Heat oven to 180°C.

Roast almonds and cashew nuts until golden in colour. Cool and chop roughly into smaller pieces.

Roast pumpkin seeds until they start to pop, then bring to room temperature.

Roast coconut flakes until golden brown, then cool to room temperature.

Cut apricots, apples and figs into strips about 5mm wide and add to the nut mixture.

Combine all the ingredients well and store in an airtight container until needed.

Serves: 6-8, Preparation time: 15min, Cooking time: 5min
