Ingredients
Mango frozen yoghurt
- 4 cups frozen mangoes, cubed
- 1 tablespoon honey or agave nectar
- ½ cup plain low-fat yoghurt

Method
- Place all ingredients in the bowl of a food processor and mix on high for 5 minutes or until smooth.
- Serve immediately or store in an airtight container and let it set in the freezer for a few hours.
- The frozen yoghurt will keep in the freezer for up to 1 month.
Pistachio and ginger phyllo cigars
Ingredients
- 100 g phyllo pastry
- 2 egg whites
- Extra virgin olive oil
- 2 tablespoons macadamia nut butter (sugar and salt free)
- 1 tablespoon honey
- 80 g shelled pistachio nuts
- 5 cm fresh ginger, peeled and chopped or grated
- 1 orange, zested
- Fresh figs, to serve

Method
- Place the oven rack in the centre of the oven and preheat the oven to 180 degrees Celsius.
- Mix the nut butter, honey and ginger together to make the pistachio-ginger filling.
- Coarsely chop the pistachios with a chef's knife and stir it and the orange zest into the nut butter mixture.
- Place a sheet of phyllo pastry on your work surface, brush with extra virgin olive oil, and place another sheet of pastry on top.
- Cut the phyllo sheet into 6 squares. At the bottom of each square, add the pistachio filling along the width.
- Brush phyllo pastry with egg whites and roll up into cigars. Fold in the edges so the filling stays inside.
- Repeat the process until you have 6 cigars.
- Place cigars on a baking tray and bake until golden.
- Serve with mango frozen yoghurt and fresh figs.
